Olaf C. Jensen (født 1947) er seniorforsker ved Syddansk Universitet.Han afsluttede kandidatuddannelsen i medicin (cand.med.) i 1978 og blev 1991 autoriseret som speciallæge i arbejdsmedicin og samfundsmedicin. Er bosiddende i Panamá. Udover sin stilling som seniorforsker ved Center for Maritim Sundhed og Samfund Syddansk Universitet er han docent ved Fueca Cadiz Universitet, Spanien.
